This easy blackened chicken can be made in under 30 minutes. You can used the herbs and spices that you have in your cabinet at home and make it as spicy as you like. We recommend that you make enough of the blackened spice rub to use for later. In order to do this you MUST NOT roll the raw chicken in the rub. This will contaminate it. Instead just sprinkle your mixed spice rub over the chicken and bottle the rest for later. Let us know how you like it.
For this Blackened Mixture you will need
I used 1 teaspoon each of these: *Unless otherwise indicated*
•1 tsp of Thyme
•1 tsp Ground Mustard
•1 tsp Cayenne Pepper
•1 tsp Garlic Powder
•1 tsp Onion Powder
•1 tsp Crush red pepper flakes (as much or as little as you would like. We piled it on)
•Salt ( Just enough to taste or none at all if you are watching your sodium intake)
•Pepper (freshly ground pepper or peppercorn if you have it)
•2 Teaspoons Paprika
•2 skinless boneless chicken breasts
Preheat oven to 250
Mix all the seasonings in a small Tupperware container.Sprinkle the seasoning over the entire breast and repeat for the second one.You can let sit over night in the fridge if you want.
Get a cast Iron skillet and pour in enough olive oil to coat the pan. Heat until extremely hot. Slow sit the chicken in the pan and let them heat (blacken) for about 1 minute and flip them to let the other side blacken. Transfer them to oven safe pan and place it in the pre heated oven. Let it cook for 8-10 minutes or until the juices run clear. Make sure you cook thoroughly.
This goes great served over greens or potatoes or some sort of whole wheat pasta. A glass of wine wouldn't hurt either. I HOPE YOU LOVE IT.
